Fermentation

After picking, the grapes go into the crusher-destemmer, from whence they fall into a fermentation vessel that they will call home while the juice cold-soaks, and while the yeast perform their magical transformations.
As you can see, we made a small batch of wine for our own use at Two Barns Farm; we used blue 30 gallon food-grade drums as fermentors. Can you tell which two of the four barrels had been innoculated with the more vigorous strain of yeast?
